	A limited release Speyside Single Malt bottled by Thompson Bros exclusively for Cork & Cask. On sale to coincide with our annual Winter Wine Fair November 13th 2021. Bottles will be shipped 1st week of December. This is a one off bottling of a single sherry Octave of whisky, which contrary to our predictions and the label, only turned only 80 bottles. The image depicts the initials of Thompson Bros and Cork & Cask carved into a cork tree. From an unnamed distillery nestled in a leafy speyside glen, a gently aromatic single malt aged 9 years in ex bourbon barrels before 3 years further maturation in a single sherry octave.

	Nose: Sweet toffee apples, autumn leaves, apricot, fig, sticky sponge cake and a little milk chocolate. Opens up to show cigar box and sweet spice. Palate: Leans into the red apple skin with juicy red apple, hazelnut and a little toast.
